Savory Chicken Shawarma recipe with Marinade

If you’re craving a taste of the Middle East, look no further than this mouthwatering Chicken Shawarma Marinade. Packed with bold flavors and aromatic spices, this recipe is your ticket to transforming simple chicken thighs into a delicious, flavorful feast.

Ingredients:

  • 3 pounds chicken thighs

  • 1/2 cup yogurt

  • 5 garlic cloves, minced

  • 1 tbsp coriander powder

  • 1 tbsp cumin powder

  • 1 tsp cardamom powder

  • 2 tsp ground fenugreek

  • 1 tbsp white vinegar

  • 1 tbsp red chili powder

  • 1 tbsp onion powder

  • 1 tbsp smoked paprika

  • Juice of 1 lemon (about 2 tbsp)

  • 1/4 cup olive oil

  • 2 tsp salt

  • 2 tsp black pepper


Instructions:

  1. Prepare the Marinade:

    In a large mixing bowl, combine yogurt, minced garlic, coriander powder, cumin powder, cardamom powder, ground fenugreek, white vinegar, red chili powder, onion powder, smoked paprika, lemon juice, olive oil, salt, and black pepper.

  2. Mix Well:

    Whisk the ingredients together until well combined and smooth.

  3. Marinate the Chicken:

    Add the chicken thighs to the bowl with the marinade. Toss the chicken in the marinade until evenly coated.

  4. Refrigerate:

    Cover the bowl with plastic wrap or transfer the chicken and marinade to a resealable plastic bag. Refrigerate for at least 1 hour, preferably overnight for the best flavor.

  5. Cook the Chicken:

    Preheat your grill, skillet, or oven. Remove the chicken from the marinade and cook until fully cooked and the internal temperature reaches 165°F (74°C), approximately 6-8 minutes per side on the grill or skillet, or 25-30 minutes in a preheated oven at 375°F (190°C).

  6. Serve:

    Let the chicken rest for a few minutes before slicing. Serve with pita bread, hummus, and your favorite toppings.
