Slow Cooker BBQ Spicy Pulled Chicken Recipe

I first made this recipe years ago for a Christmas party I hosted, and it was a HUGE hit! I know what you're thinking... BBQ pulled chicken at Christmas? But trust me, it was the perfect unexpected twist for the holiday gathering. The sweet and spicy flavors complemented the festive atmosphere perfectly, and it was so easy to serve to a crowd.



Ingredients:

  • 3 Lb. Chicken Thighs

  • 1 Sliced Onion

  • 2-3 Garlic cloves

  • 3 Chipotle Peppers in Adobo

  • 1 ½ C BBQ (Sweet and Spicy Sweet Baby Rays)

  • Salt and Pepper to taste


Directions:

  1. Season the Chicken: Salt and pepper chicken thighs to taste (generous amount recommended)

  2. Layer 1: Place half of the onion in the slow cooker bowl, then add half of the chicken

  3. Layer 2: Top with half of the BBQ sauce and half of the garlic

  4. Layer 3: Add the rest of the onion, the remaining chicken, the remaining BBQ sauce, the rest of the garlic, and the chipotle peppers

  5. Cook: Cook on high for 3 ½ hours or until the chicken is very tender

  6. Shred and Return: Remove the chicken from the sauce, shred, and place back into the sauce

  7. Final Cook: Cook for an additional 30 minutes


Serve: Enjoy with white rice, or use for making tacos, pulled chicken sandwiches, tostadas, or flautas!

Notes:

  • Adjust the level of heat to your liking by using more or fewer chipotle peppers

  • Sweet Baby Rays Sweet and Spicy BBQ sauce is recommended, but feel free to use your favorite BBQ sauce

  • This recipe is perfect for a busy day, as it's easy to prepare and cooks while you're away!
