Stuffed Cheesy Chorizo Bacon Wrapped Jalapeno Poppers

This past year, my neighbor attended my annual cookout and firework show, bringing along a dish that has since become a staple at my cookout gatherings: Cheesy Bacon-Wrapped Jalapeno Poppers with Chorizo. These poppers were an instant hit, and now I love making them for family and friends. Here’s the recipe that brings back fond memories of that first bite and never fails to impress.

INGREDIENTS

  • 12 jalapenos, halved and scooped out

  • 8 oz ground pork chorizo

  • 8 oz of cream cheese, softened

  • 1 Cup shredded cheddar cheese

  • 1/2 Cup Oaxaca cheese, shredded (Optional)

  • 2 Tablespoons chili lime seasoning or BBQ Seasoning

  • 24 strips bacon


INSTRUCTIONS

  1. Preheat grill to 375 degrees over indirect heat.

  2. On a stove top, cook ground chorizo in saucepan over medium heat and break into crumbles. Set aside.

  3. Cut jalapenos in half, slicing long ways.

  4. Take spoon to scoop out seeds.

  5. In separate bowl, combine cream cheese, cheddar cheese, and Oaxaca cheese.

  6. Place mix into each jalapeno half.

  7. Wrap filled jalapeno halves with one strip of bacon each.

  8. Apply chili lime or BBQ seasoning on top when done.

  9. Place bacon-wrapped jalapeno poppers with chorizo on cooling rack or baking sheet and place in grill for 30 minutes or until bacon is to desired crispiness.

  10. Remove when done and let cool for 5 mins.
